Cucumber, Pea & Lettuce
Simple, tasty, and three of your 5-a-day, this bright and fresh soup makes a wonderful summer starter.
Serve topped with a spoonful of yoghurt and some crusty rye bread on the side.
5 spring onions, trimmed and chopped
300g (~1 medium) cucumber, roughly chopped
1 little gem lettuce, roughly chopped
200g frozen peas
600ml vegetable stock
Salt and pepper (to taste)
Add all the ingredients, then put the lid on and select the SMOOTH function.
When the program has finished, open the lid and season to taste before serving.
