Broccoli, Cauliflower & Spinach Soup
This easy, tasty and low calorie soup is perfect for quick healthy lunches.
Serve with a sprinkle of parsley and a good portion of crusty bread on the side.
1 tbsp olive oil
1 medium onion, peeled and diced
1 garlic clove, peeled and diced
250g broccoli, cut in to florets
150g cauliflower, cut in to florets
800ml vegetable stock
Salt and pepper (to taste)

Select the SAUTE function, add the oil and allow to heat. Add the onion and stir for 2 minutes. Add the broccoli, cauliflower and spinach and stir for 1 minute then add the stock. Cancel the SAUTE function. To save time you can leave the sauté step out, but we would recommend using this feature to maximise flavour.
Put the lid on and select SMOOTH function.
When the program has finished, open the lid and season to taste before serving.
