Beetroot & Orange Soup
Beetroot and orange might seem like a strange combination but trust us with this one, it’s fantastic. Its slightly sweet flavour and dazzling colour make it a real dinner party show-stopper.
Try topping with a swirl of soured cream or crème fraîche to serve.
1 tbsp olive or cooking oil
1 onion, chopped
1 tsp sugar
1 carrot, peeled and chopped
750g (~6 medium) raw beetroot, peeled and chopped
600ml vegetable stock
1 orange, zest & juice
Salt and pepper (to taste)
Select the SAUTE function, add the oil and allow to heat. Add the onion and stir regularly for ~2 minutes until it begins to soften.
Add the sugar and continue to stir for a further 2 minutes. Add the rest of the ingredients and stir to combine, then cancel the SAUTE function. To save time you can leave the sauté steps out, but we would recommend using this feature to maximise flavour.
Put the lid on and select the SMOOTH function.
When the program has finished, open the lid and season to taste before serving.
