Ingredients
2 spring onions, trimmed and chopped
100g (~8cm) cucumber, chopped
800ml vegetable stock
300g (~1 medium) broccoli, chopped
150g frozen peas
1 handful of spinach
1 tbsp fresh parsley, chopped
1 tbsp fresh mint, chopped
1 lemon, zest and juice
Salt and pepper (to taste)

The Method
Add all the ingredients and stir to combine.
Put the lid on and select the SMOOTH function.
When the program has finished open the lid and season to taste before serving.
