Spiced Carrot & Lentil Soup
Lentils are fantastic for making thick creamy soups and this lightly spiced recipe is so tasty.
Best served topped with a spoonful of yoghurt and a sprinkle of fresh chopped coriander.
2 tbsp olive or cooking oil
1 red onion, chopped
1 tsp cumin
1 tsp chilli powder
600g (5 large) carrots, washed (or peeled) and roughly chopped
140g red split lentils
800ml vegetable stock
Salt and pepper (to taste)
Select the SAUTE function, add the oil and allow to heat. Add the onion and stir regularly for ~2 minutes until the onion begins to soften.
Cancel the SAUTE function, then add the rest of the ingredients and stir to combine. To save time you can leave the sauté step out, but we would recommend using this feature to maximise flavour.
Put the lid on and select the SMOOTH function.
When the program has finished, open the lid and season to taste before serving.
