Lentil, Spinach & Coconut
This light tasty soup is packed with goodness.
Serve with a dash of fresh lime juice to lift the creamy coconut flavour and compliment this soup perfectly.
1 tbsp olive or cooking oil
2cm fresh ginger, grated
2 garlic cloves, sliced
100g red split lentils
1 tsp turmeric
600ml vegetable stock
400ml coconut milk
300g (~2 medium) leeks, trimmed and sliced
100g (~2 handfuls) spinach
Salt and pepper (to taste)
Select the SAUTE function, add the oil and allow to heat. Add the garlic and ginger and stir regularly for ~30 seconds when the aromas begin to release.
Cancel the SAUTE function, then add the rest of the ingredients and stir to combine. To save time you can leave the sauté step out, but we would recommend using this feature to maximise flavour.
Put the lid on and select the SMOOTH function.
When the program has finished, open the lid and season to taste before serving.
