Chicken Satay Soup
Everything we love about chicken satay, but in a soup! This recipe is so full of flavour and has a kick to it too.
To add more heat, try adding the seeds to the soup instead of discarding them. Serve with some chopped peanuts and a sprinkle of coriander.
2 tbsp olive or cooking oil
400g (~2 medium) chicken breast, sliced
2 garlic cloves, crushed
2cm fresh ginger, grated
1 red chilli, de-seeded and chopped
1 x 400g can coconut milk
4 tbsp smooth peanut butter
2 limes, zest and juice
1 tbsp soft brown sugar
2 tbsp cornflour
500ml vegetable stock
Salt and pepper (to taste)
Select the SAUTE function, add the oil and allow to heat. Add the chicken and stir regularly for ~2 minutes.
Add the garlic, chilli and ginger and continue to stir for a further ~2 minutes.
Cancel the SAUTE function, then mix the cornflour with equal parts water until you have a thick paste. Add this along with the rest of the ingredients and stir to combine.
Put the lid on and select the CHUNKY function.
When the program has finished, open the lid and season to taste before serving.
