Carrot & Apple Soup
This soup is so sweet and delicious.
We recommend Pink Lady apples but feel free to experiment with your favourites.
2 tsp olive oil
1 small onion, peeled and diced
250g (2–3 medium) carrots, diced
250g (~2) Pink Lady Apples, peeled, cored and diced
750ml vegetable stock
Salt and pepper (to taste)
Select the SAUTE function, then add the oil and allow to heat. Add the onion and stir for 2 minutes. Add the carrots and apples and continue stirring for 2 minutes then add the stock. Cancel the SAUTE function. To save time you can leave the sauté step out, but we would recommend using this feature to maximise flavour.
Put the lid on and select SMOOTH function.
When the program has finished, open the lid and serve.
