Leek & Potato Soup
Leek & potato is a classic soup and this recipe is so creamy and tasty.
Best topped with a swirl of cream and some warm crusty bread on the side.
1 tbsp olive or cooking oil
1 onion, chopped
400g (~2 medium) leeks, trimmed and washed
400g (~2-3 medium) potatoes, peeled and chopped
600ml vegetable stock
Salt and pepper (to taste)
Select the SAUTE function, add the oil and allow to heat. Add the onion and leek and stir regularly for ~5 minutes until they begin to soften.
Add the potatoes and stock and stir to combine, then cancel the SAUTE function. To save time you can leave the sauté step out, but we would recommend using this feature to maximise flavour.
Put the lid on and select the SMOOTH function.
When the program has finished, open the lid and season to taste before serving.
