Courgette, Leek & Goats’ Cheese Soup

This soup is packed with vitamins but with some indulgent goats’ cheese too to make this soup really tasty.

Serve with a good helping of crusty bread on the side.

Ingredients

1 tbsp rapeseed oil

400g (~3 medium leeks), washed and sliced

450g (~2 medium) courgettes, trimmed and sliced

125g soft goat’s cheese

750ml vegetable stock

1 handful of basil

Salt and pepper (to taste)

The Method

Add all the ingredients and stir to combine then put the lid on and select the SMOOTH function.

When the program has finished, open the lid and season to taste before serving.
