White Bean & Bacon Soup

This hearty wholesome soup is easy to make and a great way to use up leftover bacon.

If you like you can try topping the soup with some extra cooked bacon and a good sprinkle of black pepper.


1 tbsp olive or cooking oil

2 bacon rashers, chopped

2 garlic cloves, crushed

1 onion, chopped

200g (~1 medium) potato, peeled and chopped

2 x 400g cans of cannellini beans, drained and rinsed

600ml vegetable stock

2 tbsp chopped parsley

Salt and pepper (to taste)

The Method

Select the SAUTE function, then add the oil and allow to heat. Add the onion, garlic and bacon and stir regularly for ~5 minutes until the onion begins to soften.

Cancel the SAUTE function then add the rest of the ingredients and stir to combine. Put the lid on and select the SMOOTH function.

When the program has finished, open the lid and season to taste before serving.
