Chestnut mushrooms give this soup a wonderful earthy colour and taste but you can experiment with any mushrooms you like.
Season well and serve with warm crusty ciabatta.
1 tbsp butter
1 onion, chopped
3 garlic cloves, crushed
400g (~10 medium) chestnut mushrooms
600ml vegetable stock
Salt and pepper (to taste)
Select the SAUTE function, add the butter and allow to melt. Add the onion and garlic and regularly for ~3 minutes until the onion begins to soften.
Add the rest of the ingredients and stir to combine, then cancel the SAUTE function. To save time you can leave the sauté step out, but we would recommend using this feature to maximise flavour.
Put the lid on and select the SMOOTH function.
When the program has finished, open the lid and season to taste before serving.
