Cauliflower Soup with Chorizo
Creamy cauliflower soup topped with crispy chorizo is a match made in heaven.
Serve topped with the crunchy chorizo and a good sprinkle of cracked black pepper. This recipe works just as well with chopped smoked bacon instead of chorizo.
6cm chorizo, skinned and chopped
1 onion, chopped
2 garlic cloves, chopped
600g (~1 medium) cauliflower, cut in to florets
750ml vegetable stock
1 tbsp double cream
Salt and pepper (to taste)
Select the SAUTE function, add the chorizo and stir regularly for ~3 minutes until it begins to crisp, then remove the chorizo and set aside for later.
Add the onion and garlic and sauté for ~2 minutes until the onion begins to soften, then cancel the SAUTE function. To save time you can leave the sauté step out, but we would recommend using this feature to maximise flavour.
Add the rest of the ingredients and stir to combine, then put the lid on and select the SMOOTH function.
When the program has finished, open the lid and season to taste before serving.
