Courgette & Fennel Soup

Courgette and fennel are a wonderful combination. Fennel bulbs can be tricky to find but once you do, the recipe is so easy to make.

Serve sprinkled with the fennel leaves with plenty of crusty bread on the side.

Ingredients

1 tbsp olive or cooking oil

1 onion, chopped

1 fennel bulb, chopped

400g (~2 medium) courgette, trimmed and chopped

1 tsp curry powder

750ml vegetable stock

Salt and pepper (to taste)

The Method

Select the SAUTE function, add the oil and allow to heat. Add the onion and stir regularly for ~2 minutes until the onion begins to soften.

Cancel the SAUTE function, then add the rest of the ingredients and stir to combine. To save time you can leave the sauté step out, but we would recommend using this feature to maximise flavour.

Put the lid on and select the SMOOTH function.

When the program has finished, open the lid and season to taste before serving.
