Spanish Chickpea Soup

This wholesome soup is so tasty and packed with protein.

This is best sprinkled with grated manchego or parmesan cheese and served with warm crusty bread.


1 tbsp olive or cooking oil

1 red onion, chopped

3 celery sticks, chopped (keep the leaves to one side)

1 carrot, roughly chopped

1 tsp smoked paprika

2 garlic cloves, crushed

220g chorizo sausage, cut in to 1cm slices

1 x 400g can chickpeas, drained

1 x 400g can chopped tomatoes

1 chargrilled pepper from a jar, drained and sliced

1.5l chicken stock

125g spinach, roughly chopped

The Method

Select the SAUTE function and press START, then add the oil and allow to heat. Add the onion, garlic, celery, carrot and paprika and stir regularly for ~5 minutes until the veg begin to soften.

Add the chorizo, chickpeas, pepper, tomatoes and stock and stir to combine. Close the lid and cook until the program ends.

Select the SLOW COOK HIGH function and adjust the time to 2 ½ hours, then press START.

With 1 hour of cooking time remaining, open lid and add the spinach and chopped celery leaves. Close the lid and allow the program to finish.
