Microwave Chilli Con Carne

The perfect comfort meal just got even better! Making this family favourite in the microwave saves energy without sacrificing on flavour! What’s more, each serving contains three of your five a day – count me in!

Ingredients

1 medium onion
1 garlic clove
100g mushrooms (optional)
1 x 400g can chopped tomatoes
1 x 400g can red kidney beans
200g beef mince
1 beef stock cube
1 tsp chilli powder
Salt & pepper, to taste
1 mug long grain or basmati rice (about 300g)

The Method

Finely chop the onion and crush the garlic. If using mushrooms, gently wipe them with kitchen roll to remove any dirt, then slice them thinly. Drain the kidney beans and set aside for now.

Put the mince into a large microwave-proof dish and add the onion and garlic. Mix using a fork until the meat is thoroughly broken up.

Cover with a microwaveable lid or cling film, leaving a small area open to allow steam to escape.

Select the Microwave function, the power will be on full (HIGH P100), press the Start button to confirm. Turn the control knob to adjust the cooking time to 5 minutes, then press Start.

After 5 minutes, remove from the microwave. Peel back the cling film/open the lid carefully and stir well with the fork, breaking up any clumps of meat.

Add the mushrooms, crumbled stock cube, chilli powder, tomatoes and beans to the meat and stir well. Add a small amount of water to the empty tomato can, swirl around and add to the bowl. Season with salt & pepper to taste. Re-cover, return to the microwave and cook on full power (HIGH P100) for five minutes. Remove the bowl and stir well.

Re-cover it again and return it to the microwave, cooking on full power (HIGH P100) for 10 minutes. Pause halfway through to stir it once more. Let it rest while you prepare the rice.

For the rice, start by boiling the kettle. Measure out a mug full of rice , the place the rice in a sieve and run cold water through it until the water runs clear, then drain. Transfer the rinsed rice to another large microwave-safe bowl. Fill the same mug with boiling water twice and pour it over the rice. Stir the rice once and place it in the microwave.

Microwave the rice on full power (HIGH P100) for 10 minutes.

Remove the rice and give it a stir. Put it back in the microwave on full power for an additional minute.

Remove the rice and allow it to stand for 1–2 minutes, then taste to ensure it's cooked to your liking. If it needs a bit more cooking, add a small amount of water and microwave it for another two minutes.
