Indulgent Homemade Mincemeat
Try this recipe and you might never eat shop bought mince pies again.
It gets better with age so feel free to leave it in the fridge for up to 6 months before using it. The recipe makes plenty so feel free to scale down the quantities if you don’t need as much, or try putting it in jars and giving them as Christmas gifts!
200g butter, cut into cubes
200g dried cranberries
100g mixed peel
1 small cooking apple, peeled, cored and finely chopped
250g soft brown sugar
1tsp ground cinnamon
1 tsp mixed spice
1 tsp almond essence
50g ground almonds
1 lemon, zest and juice
1 tsp vanilla extract
1 tsp almond extract
100ml brandy, rum or sherry (optional)

Select the SAUTE function, then add the butter and stir regularly until melted.
Add the rest of the ingredients, leaving the alcohol for now, and stir to combine.
Cancel the SAUTE function then close the lid and select the DIY function. Adjust the time to 15 minutes and the temperature to 100°C, then press START.
When the program has finished, open the lid and stir in the alcohol (if using).
