Vegan Nacho Cheese (PKP 4.8L & 5.7L)
Nachos are a film night classic and this vegan cheese sauce is so creamy and tasty.
Serve over tortilla chips with some vegan cheese, salsa and home made guacamole.
1 potato, peeled and chopped
1 sweet potato, peeled and chopped
2 carrots, peeled and chopped
2 garlic cloves, crushed
200g cashew nuts
50g nutritional yeast
1 tsp turmeric
250g almond milk
Salt and pepper (to taste)

Add the potatoes, carrots, garlic and cashews to the inner pot along with the water.
Put the lid on and close the pressure valve then select the STEAM function and adjust the time to 5 minutes.
When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
Leave to cool slightly then liquidise using a hand blender (or transfer to a blender) until smooth.
Select the SAUTE function and sir in the rest of the ingredients and reduce the sauce slightly until it starts to bubble, then season to taste before serving.
