Red Pepper, Tomato & Paprika Soup
This delicious warming soup is healthy and full of flavour.
For a more intense smoky flavour, and if you have time, try roasting the peppers whole in the oven first before slicing and using for this soup.
1 tbsp olive or cooking oil
1 red onion, chopped
3 red peppers, sliced
4 medium sized tomatoes, roughly chopped
2 tbsp smoked paprika
750ml vegetable stock
2 tbsp cornflour
Salt and pepper (to taste)
Select the SAUTE function, add the oil and allow to heat. Add the onion and stir regularly for ~2 minutes until the onion begins to soften.
Cancel the SAUTE function, then add the rest of the ingredients and stir to combine. To save time you can leave the sauté step out, but we would recommend using this feature to maximise flavour.
Put the lid on and select the SMOOTH function.
When the program has finished, open the lid and season to taste before serving.
