Sweet Potato & Red Pepper Soup
Sweet potato makes wonderfully creamy soups and this recipe is so comforting and wholesome.
Serve with a good helping of crusty bread on the side.
2 tbsp olive or cooking oil
2 red onions, chopped
500g (~4 medium) sweet potatoes, peeled and chopped
1 red pepper, chopped
1 tsp cumin
650ml vegetable stock
Salt and pepper (to taste)
Select the SAUTE function, add the oil and allow to heat. Add the onions and stir regularly for ~2 minutes until they begin to soften.
Add the rest of the ingredients and stir to combine, then cancel the SAUTE function. To save time you can leave the sauté step out, but we would recommend using this feature to maximise flavour.
Put the lid on and select the SMOOTH function.
When the program has finished, open the lid and season to taste before serving.
