Pasta Bake

Make this one-pot pasta in the microwave for an energy efficient way to enjoy a delicious dinner!

Ingredients

310ml boiled water

½ vegetable or chicken stock cube, crumbled

110g dried penne or other pasta shapes

1 tsp vegetable oil

125g fresh cherry tomatoes, halved

1 garlic clove, crushed

¼ tsp dried chilli flakes, or according to taste

2–3 tbsp double cream

40g Cheddar Cheese, Grated

Salt & Pepper

Fresh parsley or basil leaves, to garnish (optional)

The Method

Pour the water into a large, high-sided microwaveable bowl, stir in the stock cube until dissolved and then stir in the pasta and oil. The bowl needs to be large enough for the water to boil without overflowing. Cover the bowl with a microwaveable lid. Select the Microwave function, the power will be on full (HIGH P100), press Start to confirm. Adjust the cooking time to 11 minutes with the control knob, then press Start.

Stir the pasta halfway. There should be a few tablespoons of liquid left in the bowl at the end of the cooking time, but there is no need to drain them.

Tip into a shallow ovenproof dish stir in the cream, tomatoes, garlic and chilli flakes and season with more black pepper and sprinkle the cheese over the top.

Select the Grill/Conv./Combi and turn the control knob to select C2 (Microwave and Grill), then press Start to confirm. Set the time to 5 minutes using the control knob, then press Start to begin cooking.

Sprinkle with the fresh herbs and serve and enjoy.
