Loaded Jacket Potato with Bacon & Cheese

The perfect mid-week meal made fast and easy!


4 large baking potatoes
4-6 strips of streaky bacon
80g grated cheddar cheese
4 tbsp sour cream
40g butter
1 tbsp chopped chives
Salt and pepper, to taste

The Method

Rinse the potatoes, prick a few times with a fork, then sprinkle all over with salt.

Place the potatoes on the Short Oven Rack and put this on a microwavable plate. Add to the microwave.

Press Grill/Conv./Combi select C1 (Microwave and Convection) using the control knob, then press Start to confirm. Set the time to 30 minutes using the control knob, then press Start to begin cooking. Turn the potatoes halfway through the cooking process. After 30 minutes if the potatoes aren’t cooked enough, put back in for 5 minutes on the C1 setting.

Place the streaky bacon on the Tall Oven Rack. Place on a microwavable plate and add to the microwave.

Select the Air Fry function and set the cooking time to 10 minutes, then press Start. Turn halfway through. If you prefer crispier bacon, air fry for a further 3 minutes.

While the bacon is cooking slice each baked potato in half lengthwise. Use a spoon to carefully scoop the flesh into a mixing bowl. Add the butter, sour cream and 2/3 of the cheese.

Once the bacon is cooked, cut into small pieces, and add these to the mixture along with half the chives. Season to taste. Add this mixture back into the potato skins and top with the remaining cheese.

Air Fry for 5 minutes or until the cheese and melted, finish with the remaining chopped chives.
