Ingredients
1 tbsp oil
600g parsnips, chopped
1 leek, trimmed and chopped
200g cooked chestnuts (vacuum-packed)
800ml vegetable stock
Salt and pepper (to taste)

The Method
Select the SAUTE function, add the oil and allow to heat. Add the leek and parsnips stir regularly for 2 minutes until the leek begins soften.
Add the chestnuts and the stock , then cancel the SAUTE function.
Put the lid on and select the SMOOTH function.
When the program has finished, open the lid and season to taste before serving.
Serve with crème fraiche and roasted parsnips slices.
