French onion soup gets better the longer the onions are cooked. This recipe is a good compromise with speed and flavour but feel free to sauté your onions for longer if you can.
For best results, serve your soup with slices of grilled baguette topped with gruyere cheese.
1 tbsp olive or cooking oil
4 onions, thinly sliced
1 tbsp sugar
3 garlic cloves, crushed
2 tbsp plain flour
1l rich beef stock
Salt and pepper (to taste)

Select the SAUTE function, add the oil and butter and allow to melt. Add the garlic and sugar and stir regularly for ~3 minutes until they begin to soften.
Add the onions and continue to stir to a further ~5 minutes so the onions begin to caramelise. They should be brown but not burned.
Add the flour and stir to combine, then add the stock and cancel the SAUTE function.
Put the lid on and select the CHUNKY function.
When the program has finished, open the lid and season to taste before serving.
