A quick healthy breakfast or lunch option that the kids will love, egg frittata is definitely worth trying out in your air fryer.
½ tbsp oil
4 large free range eggs, whisked
50g cheddar cheese, grated
3-4 mushrooms, sliced
4 cherry tomatoes, quartered
3-4 spring onions, chopped
Handful spinach, chopped
Salt & Pepper
Pre heat the air fryer to 180C (2-3 minutes).
Put the tomatoes, mushrooms and onion in a silicone mould or on parchment liner (approx. 16cm – 18cm). Add the oil and make sure everything is coated.
Transfer to the air fryer and cook for 5 minutes. Season the whisked eggs and add to the mould/liner with the spinach and cheese, stir to make sure the vegetables are evenly distributed. Air fry for a further 12 – 15 minutes or until eggs are set.
Turn the frittata out onto a plate.
Note: You don’t need to turn the frittata
