Ingredients
1 tbsp oil
1 onion, finely chopped
2 garlic cloves, crushed
1 tsp ginger, finely chopped
1 potato, finely diced
1 carrot, finely diced
50g frozen peas
2 tsp curry powder
1 red chilli, finely chopped (optional)
Small bunch fresh coriander
Melted butter for brushing
7 sheets of filo pastry
Salt & Pepper

The Method
To make the filling, heat the oil in a frying pan, add the onion, garlic and chilli, mix in the spices and fry for 5 mins until soft. Add the vegetables (apart from the peas), and stir well until coated. Add the stock, cover and simmer for 15 mins until cooked. Add the peas at the very end. Leave to cool, mix in the coriander and season with salt and pepper.
Cut a sheet of the filo pastry in half lengthways and place it with the shorter side towards you. Spoon a tablespoon of the mixture into the bottom left corner. Flip the corner, including the filling so that it makes a triangle shape that sits on over the pastry. Brushing the pastry with melted butter or water as you go, keep folding up the length of the pastry. Then repeat making the other samosas. Spray them with a little oil.
Preheat the air fryer to 180°C (2-3 minutes).
Add the samosas to the air fryer, cook in batches if required.
Air fry for 15 minutes, until golden and crisp, serve with your favourite Indian dip.
