Easy Peasy Soup
The clue is in the name, this recipe is so quick and easy and a great way to get green goodness in to the little ones.
Best served drizzled with cream and topped with pancetta or ham.
1 tbsp olive or cooking oil
1 onion, chopped
1 garlic clove, crushed
1 handful mint leaves
400g frozen peas
800ml vegetable stock
Salt and pepper (to taste)

Select the SAUTE function, add the oil and allow to heat. Add the onion, garlic and mint and stir regularly for ~3 minutes until the onion begins to soften. To save time you can leave the sauté step out, but we would recommend using this feature to maximise flavour.
Add the peas and stock and stir to combine.
Put the lid on and select the SMOOTH function.
When the program has finished, open the lid and season to taste before serving.
