Banana Bread

Cut down on waste by using up those over-ripe bananas in this simple banana bread recipe.

Best served sliced topped with chopped almonds and a drizzle of honey or toffee sauce.

Ingredients

150g sugar

100g butter, softened

250g self-raising flour

2 eggs

1 tsp baking powder

3 large over-ripe bananas, peeled

1 tsp vanilla essence

2 tbsp milk

The Method

Add the bananas to a large mixing bowl and mash them with a fork or potato masher.

Add the rest of the ingredients and mix to combine until you have a smooth mixture.

Using some extra butter, grease the inside of the inner pot then pour in the mixture.

Close the lid and select the BAKE function, then adjust the time to 40 minutes and press START.

When the program has finished, open the lid and carefully tip out your loaf. Add the banana bread back to the inner pot but this time the other way up so the cooked side is at the top.

Close the lid again and select the BAKE function, adjust the time to 10 minutes then press START.

Carefully remove the inner pot and tip the cake out on to a cooling rack.
