Spice up your Boxing Day and use up that leftover turkey from the day before with this quick and tasty jalfrezi recipe.
Serve over fluffy basmati rice and top with chopped coriander and a squeeze of lime juice.
2 tbsp olive or cooking oil
2 onions, sliced
3 garlic cloves, crushed
3cm fresh ginger, grated
1-2 green chillies, deseeded and chopped
1 tsp ground cumin
1 tsp ground coriander
1 tsp turmeric
1 tsp garam masala
3 peppers, sliced
800g cooked turkey
1 x 400g can chopped tomatoes
Salt and pepper (to taste)

Select the BROWNING function, then add the oil and allow to heat. Add the onions and stir regularly for ~3 minutes until they begin to soften.
Add the garlic and ginger and continue to stir for a further ~2 minutes, then press CANCEL.
Add the chillies and spices and stir to combine, then add the rest of the ingredients.
Put the lid on and close the pressure valve then select the STEW function and adjust the time to 15 minutes.
When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
