Sweet Potato Burgers
These tasty vegan burgers are so easy to make, and with homemade you know exactly what’s gone in to them.
Best served in lightly toasted seeded buns with lettuce, avocado and your favourite burger sauce.
3 tbsp olive or cooking oil
500g (~2 large) sweet potatoes
1 x 400g can kidney beans, drained and rinsed
1 x 285g jar chargrilled peppers, chopped
2 spring onions, finely chopped
1 red chilli, deseeded and finely sliced
½ tsp cinnamon
½ tsp smoked paprika
2 tbsp fresh coriander, chopped
Salt and pepper (to taste)

Add the potatoes along with around half the oil to the inner pot. Close the lid and select the BAKE function, adjust the time to 45 minutes then press START.
When the program has finished, open the lid and place the potatoes on a rack to cool.
Once cooled, halve the potatoes and scoop out the inside in to a bowl.
Add the kidney beans and roughly mash, leaving some of the beans whole.
Add the rest of the ingredients, apart from the remaining oil, and mix well to combine.
Divide the mixture in to 4 equal sized balls, then squash and mould these in to burger shapes.
Select the SAUTE function, then add the rest of the oil and allow to heat. Add the burgers and sauté for ~5 minutes on each side.
