Steamed Mediterranean Fish (PKP 4.8L & 5.7L)
This simple healthy fish recipe is perfect for quick lunches.
Serve with brown rice and asparagus or green beans, with a wedge of lemon or lime on the side for squeezing.
1 tbsp olive or cooking oil
500g cherry tomatoes, halved
2 tbsp oregano
4 white fish fillets
250g black olives
2 tbsp capers
2 garlic clove, crushed
Salt and pepper (to taste)
Add the tomatoes and oregano to the inner pot and spread evenly across the bottom, then place the fish on top.
Sprinkle the tomatoes, garlic, olives, capers and oil over the fish.
Put the lid on and close the pressure valve then select the FISH/VEG function and adjust the time to 8 minutes.
When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
Serve with brown rice and asparagus or green beans, with a slice of lemon for squeezing.
