Ingredients
1 tbsp of oil
1 onion, roughly chopped
600g of boneless skinless chicken thighs, cut into pieces
2 cloves of garlic, crushed
2 cm of freshly grated ginger
85ml of passata
60ml of light soy sauce
1 red pepper, roughly chopped
1 green pepper, roughly chopped
1 orange pepper, roughly chopped
3 tbsp of rice vinegar
1 tbsp of tomato ketchup
220g tin of chopped fresh pineapple
1 tbsp of cornflour
Sliced spring onions to serves

The Method
Select the SAUTE function and adjust the time to 10 minutes, then add the oil and allow to heat. Add the onions, garlic and ginger and fry for a few minutes then add chicken pieces and fry till lightly browned. Then press CANCEL.
Add in all other ingredients (except cornflour and pineapple) and stir to combine.
Put the lid on and close the pressure valve then select the CHILLI/CURRY function and adjust the time to 10 minutes.
When the program has finished we recommend the SLOW RELEASE method before opening the pressure valve and removing the lid.
Spoon out chicken and vegetables with a slotted spoon.
Select the SAUTE function. Mix cornflour with a little water to make a paste. Add into sauce and allow to simmer for about 5-8 mins until thickened.
Add back in chicken, vegetables and pineapple and stir.
Serve with your choice of sides.
