Stew & Dumplings

A wonderfully tender beef stew perfect for cold winter nights and using up those leftover veggies from your Sunday lunch.

Best served on a bed of creamy mashed potato or with crusty bread on the side for dipping.


1 tbsp olive or cooking oil

750g beef stewing steak, chopped in to bite-sized pieces

1 onion, chopped

2 carrots, peeled and chopped

2 parsnips, peeled and chopped

½ turnip (or suede), peeled and chopped

1 large potato, peeled and chopped

1L rich beef stock

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper (to taste)


For the dumplings:

100g self-raising flour

50g suet

Pinch of salt

The Method

Select the SAUTE function, press START then add the oil and allow to heat. Add the onion and stir regularly for ~3 minutes until the onion begins to soften.

Add the steak, thyme and rosemary and stir occasionally for ~5 minutes until the meat is browned on all sides.

Add the rest of the stew ingredients and stir to combine.

Close the lid and select the STEW function, then press START.

Meanwhile, to make the dumplings mix the flour, suet, salt in a mixing bowl. Add ~5 tbsp water and mix until you have a stiff dough, adding more water if required. Divide in to 8 and with floured hands form in to balls.

With 20 minutes of cooking time left, open the lid, place the dumplings evenly on the surface of the simmering stew. Close lid and allow to cook until the programme finishes.
