Roasted Beetroot & Potato Soup

Roasted beetroot and potato soup is a delightful, vibrant dish that combines the earthy sweetness of roasted beets with the creamy texture of potatoes, resulting in a hearty and colourful bowl of comfort.

Ingredients

4 medium-sized beetroots, peeled and chopped

2 medium-sized potatoes, peeled and chopped

1 red onion, quartered

2 cloves of garlic, crushed

950ml vegetable stock

2 tbsp olive oil

Salt and pepper to taste

Fresh herbs (such as thyme or rosemary) for garnish (optional)

Sour cream or Greek yogurt for garnish (optional)

Suitable for: Digital Soup Maker

The Method

Preheat your oven to 200°C.

In a large roasting dish, combine the onion, beetroots, and potatoes. Drizzle with olive oil and season with salt and pepper. Toss them to coat evenly.

Roast in the oven for about 25-35 minutes, adding the crushed garlic for the last 5 minutes.

Add the roasted ingredients and stock to your Soup Maker.

Press the MODE button on the top of your Soup Makers lid to select EXTRA SMOOTH.

When the program has finished, open the lid and season to taste before serving.

Serve hot, garnished with fresh herbs and a dollop of sour cream or Greek yogurt if desired.
