Roast potatoes are best when they are crispy on the outside and light and fluffy on the inside. Made in the Clever Chef, you get perfect roasties every time.
It goes without saying these are best as part of your Sunday roast, but also worth trying with stews and casseroles.
2 tbsp olive or cooking oil
1kg potatoes, peeled and quartered
Salt and pepper (to taste)

Add ~400ml boiling water to the inner pot. Insert the steamer tray and evenly lay the potatoes on top.
Close the lid, select the STEAM function and adjust the time to 5 minutes then press START.
When the program is finished, put the potatoes to one side while you discard the water and rinse the inner pot before returning to the Clever Chef.
Add half the oil followed by the potatoes, then drizzle the rest of the oil on top. Close lid and select the MEAT/ROAST function, then press START.
After 20 minutes, open the lid and rotate the potatoes then close the lid again and continue cooking.
