Peanut Butter Chicken (PKP 4.8L & 5.7L)
This recipe is guaranteed to be a family favourite. There is room in this for a little more chilli if you like the extra heat.
To make this go further, try serving with rice or noodles. Sprinkle with coriander and chopped peanuts.
2 tbsp olive or cooking oil
500g chicken breast, sliced
2 garlic cloves, crushed
2 red chillies, finely sliced
3cm fresh ginger, peeled and grated
1 tsp garam masala
4 tbsp smooth peanut butter
1 x 400ml can coconut milk
1 x 400g can chopped tomatoes
1 handful coriander leaves
Salt and pepper (to taste)
Select the SAUTE function, add the oil and allow to heat. Add the chicken and stir regularly for about 2 minutes. Add the garlic, chillies, ginger and garam masala and continue to stir for a further 2 minutes, then press CANCEL.
Add the rest of the ingredients, leaving some of the coriander for later, and stir to combine.
Put the lid on and close the pressure valve then select the STEW/SOUP function and adjust the time to 15 minutes.
When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
Serve with rice or noodles.
