Kallo’s Mushroom & Garlic Soup
This tasty soup from Kallo’s is full of rich earthy flavours.
Season well and serve with warm crusty ciabatta.
1 tbsp olive or cooking oil
4 shallots, peeled and chopped
2 garlic cloves, crushed
1 tbsp cornflour
400g chestnut mushrooms, roughly chopped
1 x Kallo Organic Mushroom stock cube
1 x Kallo Organic Chicken stock cube
Salt and pepper (to taste)
Select the SAUTE function, add the oil and butter and allow to melt. Add the garlic and shallots and stir regularly for ~3 minutes until the shallots begin to soften.
Cancel the SAUTE function. Take ~250ml of the water and mix with the corn flour until you have a thin paste.
Add the cornflour mix along with the rest of the ingredients, and stir to combine.
Put the lid on and select the SMOOTH function.
When the program has finished, open the lid and season to taste before serving.
