Frijoles Refritos / Refried Beans (PKP 4.8L & 5.7L)
Frijoles Refritos are a staple in Mexican cooking. They’re easy to make and so versatile, they can be used in quesadillas, tacos, salads and burritos.
2 tbsp olive or cooking oil
1 onion, finely diced
4 garlic cloves, crushed
2 x 400g cans of pinto beans, drained and rinsed
250ml vegetable stock
1 tsp chilli powder
1 tsp ground cumin
1 tsp oregano
Juice of 1 lime
Salt and pepper (to taste)
Select the SAUTE function, add the oil and allow to heat. Add the onion and garlic and stir regularly for about 5 minutes until the onion begins to soften.
Add the rest of the ingredients and stir to combine, then press CANCEL.
Put the lid on and close the pressure valve, then select the STEW/SOUP function and adjust the time to 5 minutes.
When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
Use either a potato masher or stick blender to break down the beans in to a paste ready to serve.
