Ingredients
2 chicken breasts, diced in to 2cm cubes
3 tbsp olive or cooking oil
1 lemon, zest and juice
1 clove of garlic, crushed
2 tbsp dried oregano
Salt and pepper (to taste)

The Method
Add the diced chicken to a mixing bowl followed by the rest of the ingredients and stir to combine. Leave to marinate in the fridge for at least 30 minutes to maximise flavour.
Add the chicken mixture to the inner pot, then put the lid on and close the pressure valve then select the POULTRY function and adjust the time to 5 minutes.
When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
Drain any liquid, then select the SAUTE function and stir regularly for about 5 minutes to brown the chicken.
Serve in pitta breads with plenty of tzatziki, lettuce and tomato.
