Once you try our Fajita Stack it is bound become a regular family favourite at the dinner table.
Serve this showstopper in the middle of the table so everyone can dive in. Top with a sprinkle of cheese and some guacamole, soured cream and salsa on the side.
4 tbsp olive or cooking oil
3 chicken breasts, sliced
1 onion, chopped
2 peppers, sliced
1 x packet fajita seasoning
5 x tortilla wraps
200g Mexican chilli cheese, sliced
200g cheddar cheese, grated

Select the SAUTE function, press START, then add half the oil and allow to heat. Add the chicken and stir regularly for ~10 minutes until it has started to cook through, then remove and set aside.
Add the rest of the oil followed by the onion and pepper and stir for ~5 minutes until the veg begin to soften. Add the cooked chicken along with the seasoning and stir to combine, then press CANCEL.
Close the lid, select the DIY function and adjust the time to 5 minutes, then press START.
When the program has finished, open the lid and remove your fajita mix and set aside.
Wash and dry the inner pot then add a large tortilla to the bottom of the inner pot, then a layer of chilli cheese. Add another tortilla followed by half the fajita mix then half the grated cheese.
Repeat the previous step with another tortilla, chilli cheese, tortilla, and the rest of the fajita mix, then top with a final tortilla.
Close the lid, select the BAKE function, adjust the time to 20 minutes then press START.
When the program has finished open the lid and tip out your fajita stack so it is upside down.
