Ingredients
3 tbsp olive or cooking oil
3 red chillies, deseeded and chopped
3cm fresh ginger
4 star anise
1 tbsp brown sugar
100ml soy sauce
1 tsp cinnamon
600ml vegetable stock
5 kaffir lime leaves
3 aubergines, cut in to wedges
3 tbsp cornflour
Salt and pepper (to taste)

The Method
Select the SAUTE function, add the oil and allow to heat. Add the chillies, ginger and star anise and stir regularly for about 2 minutes until they start to become fragrant.
Add the sugar and soy sauce and stir for a further minute.
Add the rest of the ingredients apart from the cornflour and stir to combine.
Put the lid on and close the pressure valve then select the STEW/SOUP function and adjust the time to 8 minutes.
When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
In a cup or bowl, combine the cornflour with some water, and mix until you have a thick paste, then add this to the stew.
Select the SAUTE function and stir to thicken the sauce for 3 minutes. While you stir, scoop each star anise from the top before serving.
Serve over fluffy rice, topped with chopped coriander and sliced red chilli.
