Ingredients
For the Rice Pudding:
100g short-grain rice (such as Arborio or pudding rice)
480ml milk (or a mix of milk and cream for extra richness)
50g sugar
½ tsp vanilla extract
½ tsp ground cinnamon
For the Salted Caramel Apples:
1 apple, peeled, cored, and diced
2 tbsp butter
2 tbsp brown sugar
½ tsp cinnamon

The Method
Add the rice, milk, sugar, vanilla extract, and a pinch of salt to CleverPot. Stir everything to combine.
Set CleverPot to LOW and cook for about 20-30 minutes, stirring occasionally. The rice will absorb the milk and become creamy. If it gets too thick, you can add a little more milk.
Once the rice is tender and the pudding is creamy, stir in the ground cinnamon (if using) and set aside. Remove and keep warm.
Set CleverPot to HIGH and melt the butter.
Add the diced apples, brown sugar, cinnamon, and a pinch of salt. Cook for 5-7 minutes, stirring occasionally, until the apples are soft and caramelised.
Spoon the creamy rice pudding into bowls. Top with the caramelised apples and drizzle any remaining caramel sauce from the pan over the pudding.
