Rudi’s Beef Skirt Black Bean Stir Fry

4 pieces of beef skirt

Jar of black bean sauce

1 TBSP black pepper

1 TSP salt

Pack of Noodles

Handful of bean sprouts

1 TBSP of sesame oil

1 small red chilli

Seasame seeds

The Method

Cut the beef skirt into strips and put into a bowl, then add the black pepper, salt and the cut up the chilli (de-seeded). Add the oil and then mix. Once mixed cover and leave to marinate for 1 hour to allow the meat to marinate in the seasoning.

Set the clever chef to DIY function and adjust time to 10 minutes. Add the meat into the CleverChef and keep stirring to allow the meat to brown. Once the meat has browned add the jar of black bean sauce, stir, then add the water. This will allow you to make the sauce more indulgent. Next press cancel and select the Stew setting. Adjust timing to 45 minutes and allow to cook.

Cook the noodles in a pan of water (follow packet instructions). Once cooked drain the noodles and drizzle with a little bit of sesame oil in the pan for 1 minute. Then put the noodles into a bowl & put some of the beef skirt on top and spoon on some sauce. Finish off by putting some bean sprouts and a sprinkle of sesame seeds to garnish.
