Donal’s quick and healthy soup that will prove to be a real hit for a hearty lunch or speedy dinner, adapted from his book ‘Meals in Minutes’.
Serve with some crusty bread or topped with homemade croutons, drizzled in olive oil and seasoned before being baked in the oven until crispy.
1 onion, finely chopped
2 stalks celery, sliced
3 carrots, roughly chopped
1.5l good quality chicken stock
4 chicken breasts
170g noodles, egg or rice
Small handful of dill & parsley, roughly chopped
1 tbsp olive oil
Salt and black pepper (to taste)

Prepare the vegetables, then open up the lid, add the oil to the pot and select the SAUTE function. Add the vegetables and fry for 6 minutes, or until the onion has begun to soften. Season with sea salt and black pepper.
Add the chicken stock to the pot and select the SOUP function, adjusting the time to 15 minutes.
After 5 minutes, add the whole chicken breasts to the pot and cook for the final 10 minutes, or until the chicken has cooked all the way through.
Remove the chicken to a chopping board and shred, checking that the chicken is fully cooked.
Add the noodles to the pot, then close the lid and select the SOUP function, cooking for another 5 minutes or until the noodles are tender.
Once the noodles are cooked, return the chicken pieces to the pan along with the dill and parsley. Season generously to taste and serve.
