Sticky Coconut Rice

Thai curries are best served alongside balls of sticky coconut rice, and this recipe is so easy to do.

You can use basmati rice, but to get that sticky texture, sushi rice is by far the best. Serve in large balls next to one of our Thai curry recipes.

Ingredients

2 tbsp butter

200g sushi rice, rinsed

400ml coconut milk

Suitable for: Pressure King Pro 6L 20-in-1 Pressure Cooker

The Method

Select the FRY function, press START, then add the butter and allow to melt. Add the rice and coconut milk and stir to combine, then press CANCEL.

Put the lid on and close the pressure valve then select the RICE function and adjust the time to 20 minutes, then press START.

When the program has finished press CANCEL. For this recipe we recommend the QUICK RELEASE method before opening the pressure valve and removing the lid.
