Shemin’s Lentil & Cauliflower Dhal
This creamy and filling Dhal recipe uses the Shemin's Massaman paste to combine the wonderful flavours of India & Thailand.
Sprinkle with fresh chopped coriander and serve as a side dish or main course with some naan bread on the side.
1 tbsp olive or cooking oil
1 onion, sliced
50g (1/2 a tub) Shemin’s Massaman (or Medium Indian) Curry Paste
½ medium cauliflower, cut in to florets
2 x 400g cans of coconut milk
150g red split lentils
1 lime, juiced
1 vegetable stock cube
Salt and pepper (to taste)

Select the SAUTE function, add the oil and allow to heat. Add the onion and stir regularly for ~2 minutes until it begins to soften.
Add the curry paste and water and continue to stir for a further 1 minute, then cancel the SAUTE function.
Add the rest of the ingredients and stir to combine, then put the lid on and select the CHUNKY function.
When the program has finished, use the SMOOTH+ function for ~5 seconds to break down the ingredients until the dhal is thick and creamy. Open the lid and season to taste before serving.
