Pisto Manchego con Huevos
Pisto con huevos (Ratatouille with eggs) is a tasty traditional Spanish dish best served with crusty bread.
This recipe is great for using up leftover veggies. Try butternut squash for a slightly sweeter flavour.
2 tbsp olive or cooking oil
3 courgettes, chopped
1 red pepper, chopped
1 green pepper, chopped
2 onions, chopped
4 garlic cloves, crushed
1 x 400g can chopped tomatoes
2 tsp smoked paprika
1 tsp cumin
1 tbsp honey
4 large eggs
100g Manchego cheese, finely grated

Select the SAUTE function and press START, then add the oil and allow to heat. Add the aubergine and stir regularly for ~3 minutes until it begins to soften.
Add the courgettes, peppers, onion and garlic and stir for a further ~5 minutes.
Add the tomatoes, paprika, cumin and honey and stir to combine, then press CANCEL.
Close the lid and select the SAUTE function again and adjust the time to 15 minutes then press START.
With 5 minutes remaining, open the lid and stir in the cheese, saving some for serving. Crack the eggs on the top being careful not to break the yolks, then close the lid and allow the program to finish.
