Nourishing Amy’s Carrot, Parsnip, Lentil & Ginger Soup
This tasty creamy recipe from Nourishing Amy is perfect for cold winter nights.
Serve topped with some natural yoghurt, toasted croutons and a drizzle of chilli oil for some extra heat.
1 tbsp coconut oil (or olive/cooking oil)
1 onion, diced
4 garlic cloves, crushed
3cm fresh ginger, peeled and chopped
1 tsp ground cumin
1 medium carrot, peeled and chopped
1 medium parsnip, peeled and chopped
60g red lentils
1 tsp miso paste
Salt and pepper (to taste)
Select the SAUTE function, add the oil and allow to heat. Add the onion, garlic and ginger and stir regularly for ~3 minutes until the onion begins to soften.
Cancel the SAUTE function, then add the rest of the ingredients and stir to combine.
Put the lid on and select the SMOOTH function.
When the program has finished, open the lid and season to taste before serving.
