Ingredients
Canned plum tomatoes (San Marzano) 400g or 1 can
Salt – 1/2tsp or to taste
Basil leaves – 20g of basil or a handful to taste chopped finely.
Oregano/Italian seasoning – 1 tbsp
Sugar – A pinch of
Olive oil – 1 tsp
Garlic – 1 whole crushed garlic clove
Makes Sauce for 4x 12-inch pizzas

The Method
Start by placing a saucepan on a medium heated hob and add the oil and allow to heat. Once starting to warm, add the crushed garlic, and stir occasionally whilst it softens.
Add remaining ingredients and simmer on a medium to low heat, continuing to stir occasionally for around 20 minutes. In this time the sauce should start to thicken and produce a richer flavoured result.
It is suitable to then use this sauce straight away whilst hot, after cooling or straight from the fridge once chilled.
