Classic Lentil & Bacon Soup
A nourishing, comforting, hearty winter warmer with plenty of nutrients.

1 tbsp oil
1 onion , diced
1 carrot, diced
1 tsp ground cumin
½ tsp turmeric (optional)
150g smoked back bacon, diced
250g red lentils, rinsed
1L vegetable or ham stock
Salt and ground black pepper (to taste)

Select the SAUTE function, add the oil and allow to heat. Add the bacon and fry for ~2 minutes, then add the onion, carrot, and cumin and turmeric if using and stir regularly for ~2 minutes until the onions begin to soften.
Add the rest of the ingredients and stir to combine, then cancel the SAUTE function.
This soup works both smooth and chunky, select SMOOTH or CHUNKY depending on which consistency you prefer. (NOTE: If you make it CHUNKY and once cooked you’d prefer to make it smooth, then select the SMOOTH+ function, and press and hold the SELECT button to use the blender until the soup is the correct consistency. Release the SELECT button to stop the blender.
Open the lid and season to taste before serving.
